BAKED FETA & OLIVES

Ingredients
  • A  block of Greek feta 
  • Mix of your favorite olives, but make sure they’re pitted
  • 8-10 garlic cloves 
  • Extra virgin olive oil
  • Red pepper flakes
  • Fresh thyme
  • Salt and pepper
  • Fresh basil leaves
  • Honey
Instructions
  1. Preheat the oven to 180°C/375°F.
  2. Peel the garlic cloves and place them in an ovenproof baking dish along with the pitted olives.
  3. In a small bowl, stir together olive oil, fresh thyme, salt, black pepper and red pepper flakes.
  4. Pour the marinade over the olives and mix everything well.
  5. Pat the feta block dry and place it in the middle between the olives. Drizzle with some marinade.
  6. Bake until the oil bubbles and the cheese looks soft, about 20 minutes. Carefully remove from the oven and brush everything with honey.
  7. Bake for another three minutes until the feta turns golden brown.
  8. Serve immediately with crusty bread.
