BRUSCHETTA WITH FIGS
Ingredients
- 4-6 small slices sour-dough bread or ciabatta/baguette
- 4 large ripe figs, sliced
- 150 g ricotta or soft goat cheese
- 1 spring of fresh thyme
- 3 tsp honey
- 2 tbsp of extra-virgin olive oil
- Salt
- Pepper
Instructions
Toast the bread and drizzle with olive oil.
Add the ricotta or goat cheese to a bowl.
Add salt and pepper, some leaves from the thyme and start whipping for 1 minute.
Spread the creme on the bread slices.
Arrange sliced figs on top and drizzle with honey.
Sprinkle the thyme.
Place on a platter and serve at room temp, or place it first into a warm oven for a few minutes.
