BRUSCHETTA WITH FIGS

Ingredients
  • 4-6 small slices sour-dough bread or ciabatta/baguette
  • 4 large ripe figs, sliced
  • 150 g ricotta or soft goat cheese
  • 1 spring of fresh thyme
  • 3 tsp honey
  • 2 tbsp of extra-virgin olive oil
  • Salt
  • Pepper
Instructions

Toast the bread and drizzle with olive oil.

Add the ricotta or goat cheese to a bowl.

Add salt and pepper, some leaves from the thyme and start whipping for 1 minute.

Spread the creme on the bread slices.

Arrange sliced figs on top and drizzle with honey.

Sprinkle the thyme.

Place on a platter and serve at room temp, or place it first into a warm oven for a few minutes.
