FIGS & GOAT CHEESE SALAD

Ingredients
  • 125 gr fresh Rocket
  • 100gr goat cheese (break into small pieces)
  • 2 figs (cut in quarter)
  • 50 gr walnuts
  • 1 tablespoon honey
  • half lemon
Instructions
  1. Cut the stems from figs and slice in quarters, if large and in half if small.
  2. Arrange the rocket leaves on a large platter, and then put the goat’s cheese on top of the leaves, then arrange the cut figs and walnuts in and around the cheese.
  3. Whisk together the honey and lemon juice (add olive oil and black pepper if you like to).
  4. To finish, drizzle the dressing over the salad
