GREEN BEANS IN TOMATO SAUCE (LOUBIA B ZEIT)

Ingredients
  • 600 grams green beans (1 1/2 packs frozen)
  • 8 tomatoes (peeled)
  • 1 1/2 medium-sized onion (cut into slices)
  • 1 1/2 full heads garlic (1 chopped and 1/2 smashed)
  • 1 bunch coriander
  • 2-3 tbsp olive oil
  • 1 tbsp dried coriander
  • Sea salt to taste
Instructions
  1. Start by heating around 1 tbsp of olive oil, and add your beans
  2. Sauté for 2-3 minutes, then onion and chopped garlic, cover the pot, and let cook on medium heat for about 10 minutes, or until the onions have softened
  3. Add in tomatoes, bring to a boil, and as soon as it starts bubbling, lower the heat to medium and let it cook for at least 30 minutes
  4. Then add around 3/4 of the fresh coriander, sea salt, smashed garlic, and dried coriander, cover and let cook for 2-3 minutes
  5. Let cool completely, drizzle with olive oil, and garnish with coriander
  6. Serve with bread or on its own as a side dish or main meal
