GREEN BEANS IN TOMATO SAUCE (LOUBIA B ZEIT)

Ingredients
- 600 grams green beans (1 1/2 packs frozen)
- 8 tomatoes (peeled)
- 1 1/2 medium-sized onion (cut into slices)
- 1 1/2 full heads garlic (1 chopped and 1/2 smashed)
- 1 bunch coriander
- 2-3 tbsp olive oil
- 1 tbsp dried coriander
- Sea salt to taste
Instructions
- Start by heating around 1 tbsp of olive oil, and add your beans
- Sauté for 2-3 minutes, then onion and chopped garlic, cover the pot, and let cook on medium heat for about 10 minutes, or until the onions have softened
- Add in tomatoes, bring to a boil, and as soon as it starts bubbling, lower the heat to medium and let it cook for at least 30 minutes
- Then add around 3/4 of the fresh coriander, sea salt, smashed garlic, and dried coriander, cover and let cook for 2-3 minutes
- Let cool completely, drizzle with olive oil, and garnish with coriander
- Serve with bread or on its own as a side dish or main meal
