LAMB KOFTA

Kofta, the popular Middle Eastern dish, is filled with garlic, herbs, and spices and then grilled

Ingredients

SERVES: 4

  • 8 skewers for grilling
  • 1 kg ground lamb
  • 1 onion, grated
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • ½ tsp paprika
  • ½ tsp cinnamon
  • ½ tsp cayenne pepper
  • 1 tbsp chopped mint
  • ½ sea salt
Instructions
  1. Put the skewers in a water bath for 30 minutes to avoid burning them later. This step is not necessary if you are using metal skewers.
  2. In a food processor, chop the onion and garlic. Then add the parsley and pulse a few more times. Pour the contents into a bowl.
  3. Add the ground beef and spices and mix well with a wooden spoon. Cover with cling film and place in the fridge for 30 minutes. You can prepare the kofta mixture a day in advance and keep it in the fridge.
  4. When the mixture has cooled, shape the mixture into small, kofta-shaped pieces by taking a handful of the meat and shaping them on a wooden skewer.
  5. Brush with oil and place the kofta on the grill for 4-5 minutes on one side, then turn for another 4-5 minutes until golden brown. Only turn them when they are well sealed, otherwise the meat will stick to the grill.
  6. Serve immediately hot with warm flatbread and a side of your choice.
