LAMB KOFTA
Ingredients
SERVES: 4
- 8 skewers for grilling
- 1 kg ground lamb
- 1 onion, grated
- 2 garlic cloves, minced
- 1 tsp ground cumin
- ½ tsp paprika
- ½ tsp cinnamon
- ½ tsp cayenne pepper
- 1 tbsp chopped mint
- ½ sea salt
Instructions
- Put the skewers in a water bath for 30 minutes to avoid burning them later. This step is not necessary if you are using metal skewers.
- In a food processor, chop the onion and garlic. Then add the parsley and pulse a few more times. Pour the contents into a bowl.
- Add the ground beef and spices and mix well with a wooden spoon. Cover with cling film and place in the fridge for 30 minutes. You can prepare the kofta mixture a day in advance and keep it in the fridge.
- When the mixture has cooled, shape the mixture into small, kofta-shaped pieces by taking a handful of the meat and shaping them on a wooden skewer.
- Brush with oil and place the kofta on the grill for 4-5 minutes on one side, then turn for another 4-5 minutes until golden brown. Only turn them when they are well sealed, otherwise the meat will stick to the grill.
- Serve immediately hot with warm flatbread and a side of your choice.
