SCRAMBLED EGGS WITH TOMATO AND GREEN PEPPER (MENEMEN)

Ingredients

Serves: 3

  • 2 tablespoons of butter
  • 2 big green peppers (finely chopped)
  • 4 big tomatoes (peeled and finely chopped)
  • 4 eggs
  • 1 small bunch of parsley ( finely chopped)
  • Salt & Pepper to taste
Instructions
  1. Melt the butter in a nonstick pan over medium heat
  2. Add green peppers and cook for 5 minutes stirring occasionally.
  3. Add tomatoes, salt & pepper, cook for another 10 minutes.
  4. Crack the eggs on top of it cooking for a further 2-3 minutes while stirring.
  5. Remove from the heat, sprinkle the parsley, and serve immediately.
