SCRAMBLED EGGS WITH TOMATO AND GREEN PEPPER (MENEMEN)

Ingredients
Serves: 3
- 2 tablespoons of butter
- 2 big green peppers (finely chopped)
- 4 big tomatoes (peeled and finely chopped)
- 4 eggs
- 1 small bunch of parsley ( finely chopped)
- Salt & Pepper to taste
Instructions
- Melt the butter in a nonstick pan over medium heat
- Add green peppers and cook for 5 minutes stirring occasionally.
- Add tomatoes, salt & pepper, cook for another 10 minutes.
- Crack the eggs on top of it cooking for a further 2-3 minutes while stirring.
- Remove from the heat, sprinkle the parsley, and serve immediately.
