OVEN ROASTED FRESH RICOTTA OR GOAT CHEESE

Ingredients

Serves 8

  • 2 rounds of 250 g each of cheese
  • Dried chili flakes
  • 2 tbs dried oregano or za’atar (Hyssop)
  • Salt, freshly ground black pepper

SAUCE:

  • 1 fresh hot red chili pepper, chopped very finely (seeds included)
  • A handful of fresh oregano / za’atar leaves
  • 1 cup olive oil
  • Salt and pepper
Instructions
  1. Heat the oven to 220ºC.
  2. Line a baking sheet with oiled baking paper and put the cheese. Spread over a generous amount of dried chili, dried oregano/za’atar, salt and pepper and drizzle with a nice amount of olive oil.
  3. Roast in the oven for 15-20 minutes, until golden brown and crispy on top. Meanwhile, prepare sauce with all the ingredients.
  4. Serve hot with a generous amount of sauce.
