BAKED PEARS WITH GORGONZOLA

Pears and Gorgonzola are the perfect pairing!

Easy and delicious appetizer or sweet and savory dessert with an extra flavor

Ingredients

SERVES 4

  • 4 large ripe pears
  • 200 g Gorgonzola
  • ¼ cup crushed walnuts
  • 50 g sugar
  • ¼ cup honey
  • 3 tbsp butter melted
  • 3 tbsp balsamic vinegar
  • Fresh thyme
  • Sea salt
  • Black pepper
Instructions

Preheat the oven to 200 °C (400 °F).

Wash and halve the pears. Carefully remove the inner part, leaving the skin on.

Cut a thin slice from the rounded sides of each pear to allow the pears to lie flat in a casserole dish. 

Melt the butter in an oven-proof pan. Fry the pears, cut-side down, on the stove-top for two minutes. 

Place the pan in the oven and bake the pears for 10 minutes.

Meanwhile, in a bowl, gently mix together blue cheese, walnuts, and thyme.

In another small bowl, whisk together the sugar, melted butter, balsamic vinegar, half of the honey, salt and pepper.

Remove the pears from the oven, turn and brush with half of the sugar mixture. Fill each pear with the blue cheese mixture. Pour the other half of the sugar mixture over the pears and roast for another 10-15 minutes.

Remove the pan from the oven, drizzle with the remaining honey and garnish with small sprigs of thyme.

Leave to rest for a few minutes and serve warm.
