SAUTÉED FRESH OKRA WITH TOMATOES AND LEMON CONFIT

Ingredients
- 500 g fresh okra
- 2 garlic cloves, peeled
- 4-5 ripe tomatoes, cut in 4
- 1 tbs lemon confit, chopped large
- 1 tbs lemon fillet (clean from pulp)
- A big handful of parsley leaves + za’atar
- leaves and or oregano leaves, coarsely chopped Hot green pepper to taste, chopped
- 1/2 cup feta cheese, crumbled
- Olive oil
- Salt and freshly ground black pepper
Instructions
- Heat olive oil with garlic cloves in a large skillet over medium high heat.
- When fragrant with garlic – add okra and fry for 5 minutes.
- Add tomatoes and sauté until they kind of melt.
- Add lemons, green pepper and seasoning. 5. When okra is soft and browned, take off heat. Add leaves and disperse crumbled feta. 6. Drizzle with olive oil and serve hot.
