SAUTÉED FRESH OKRA WITH TOMATOES AND LEMON CONFIT

Ingredients
  • 500 g fresh okra
  • 2 garlic cloves, peeled
  • 4-5 ripe tomatoes, cut in 4
  • 1 tbs lemon confit, chopped large
  • 1 tbs lemon fillet (clean from pulp)
  • A big handful of parsley leaves + za’atar
  • leaves and or oregano leaves, coarsely chopped Hot green pepper to taste, chopped
  • 1/2 cup feta cheese, crumbled
  • Olive oil
  • Salt and freshly ground black pepper
Instructions
  1. Heat olive oil with garlic cloves in a large skillet over medium high heat.
  2. When fragrant with garlic – add okra and fry for 5 minutes.
  3. Add tomatoes and sauté until they kind of melt.
  4. Add lemons, green pepper and seasoning. 5. When okra is soft and browned, take off heat. Add leaves and disperse crumbled feta. 6. Drizzle with olive oil and serve hot.
