SHRIMP SAGANAKI WITH PEPPER SPREAD

Ingredients
  • 500 g Shrimps

  • Olive oil

  • Salt

  • Black pepper

FOR THE SAUCE:

  • 1 onion (chopped)

  • 1 red pepper (sweet, not chilli) (brunoise) 1 green pepper (brunoise)

  • 1 garlic clove (chopped)

  • 200 g pepper spread soft TRADIFRESH

  • 1 teaspoon tomato paste

  • 1 tablespoon sugar

  • 30 ml Greek “Ouzo”

  • Olive oil

  • Salt

  • Ground pepper

  • Parsley (chopped)

FOR THE FETA MOUSSE:

  • 125 gr Feta cheese

  • 125 gr cream cheese

  • 50 gr heavy cream

  • 20 gr brine (of Feta cheese)

Instructions
  1. We pull off only the legs of the shrimps and with kitchen scissors we cut the shell on the back. Remove the “vein” (dark, thin string) with the help of a knife or a toothpick.
  2. Then with a knife open them in the middle until having a fillet (butterflied).
  3. Add salt, black pepper, olive oil and sauté the shrimps for 2-3 minutes.

FOR THE SAUCE:

  1. Chop all the vegetables. In a pot add olive oil and sauté the onion and the garlic for 1-2 minutes. Then add the peppers.
  2. Sauté all the ingredients together for 1 more minute. Pour in the Greek Ouzo and bring it to boil. Then add the rest of the ingredients except the parsley.

FOR THE FETA MOUSSE:

  1. In a small food processor or a blender process all the ingredients and blend until having a smooth result.
